Peach and Cucumber Salsa

A tasty fresh fruit salsa made with peaches, cucumbers, jalapeno peppers and cilantro. Would be great with fish and grilled meat or poultry.
Ingredients3 large peaches, ripe but firm (peeled, pitted and finely diced)
1 cup English cucumber, unpeeled and finely diced
3/4 cup red bell pepper, seeded and finely diced
1/3 cup fresh cilantro, finely chopped
1 small jalapeno chile, seeded and finely chopped
2 tablespoons fresh lime juice
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3 tablespoons apricot preserves
(Salt, pepper and jalapenos should be adjusted to taste)

Method
Combine all ingredients in a medium bowl and stir to blend. Cover and refrigerate until needed. Stir before serving. May be prepared 2 - 3 hours in advance.



Notes: This low-fat, low-calorie salsa is good on everything.
